Hello ,
How has your summer been? Did you take any exciting vacation trips? What was the most interesting experience you had this summer?
We attended a conference in Japan and decided to stay an extra week. Japan is a beautiful country-we experienced two earthquakes, hiked a mountain, and visited several gardens.

Spicy Egg Salad
Ingredients
6 hard-boiled eggs, chopped
1 jalapeño pepper, seeded and finely chopped
¼ cup green onions, chopped
½ cup finely shredded cheddar cheese
3 tablespoons mayonnaise
2 tablespoons sour cream
¼ teaspoon ground cumin
½ teaspoon yellow mustard
Salt and black pepper, to taste
Instructions
In a medium mixing bowl, combine the chopped hard-boiled eggs, jalapeño, green onions, and cheddar cheese. Gently toss to mix.
In a small bowl, whisk together the mayonnaise, sour cream, cumin, mustard, and a pinch of salt and pepper until smooth.
Pour the dressing over the egg mixture and stir until everything is evenly coated. Taste and adjust seasoning if needed.
Serve immediately on its own, over a bed of greens, or as a sandwich filling.
Notes
For milder heat, remove all seeds and membranes from the jalapeño (or use half a pepper).
Best enjoyed fresh, but leftovers keep covered in the refrigerator for up to 2 days.
